A deep respect for the innovators that came before as well as an admira- tion for our peers continually advancing the craft. We forge without static stubbornness but also with a healthy skepticism for trends and passing fads. The holy is approachable and always at hand.     Here at Docent, we try to see what's under people's shirts.. Er, um, let me rephrase- we like to think the color of the collar has no correlation to the quality of the character. For it isnt the brand of work, but the essence of effort that counts. What floats above collars in that cosmic soup of life giving ooze is our focus. For the working stiff and the young sophisticate alike - we present an easy drinking yet character filled quencher that shrugs off any occupational contrast. Cashmere and Motueka hops offer a refresh- ing, Nillson-esque union of lime and coconut to drive our point home - That a well deserved post-toil pint among pals can make all the difference in our day, no matter the ruff.

    Red Ale

    Dig your color scheme brooooo! Complimentary shades can entice the senses, signify team allegiance, and often times elevate the sum of its parts through meaning. Like the beloved and boisterous back table behind the brewery, we relate to what is special because of what is different in the immediate surroundings. Red isnt Christmas without green. Old Glory isnt patriotic until blue waves with red and white. And, of course. it just ain't Padre yellow without that bold brown. This complex malt bill brings notes of Vanilla wafer and dark fruit to support hoppy notes of fresh strawberry and a balanced bitterness. Beyond the contrast of black and white is the beauty when hues collude and shine brighter together.

    Brewed to a calculated 55 ibus and 5.5% abv or double nickels on the dime. Angular notes of ruby red grapefruit, sweet orange, and pine strum upon a groovy bassline of light honey and vanilla in a compact yet satisfying little ditty. A liquid tribute to a group of cats from San Pedro who jam econo - or fitting a lot into a little. "Punk was whatever we made it to be" a quote from late lead singer/guitarist D Boon inspires every recipe Ive ever brewed. Listen to the Minute- men, their band could be your life.

    West Coast IPA

    Echoes of a distant tide still resonate with us - the classic, bitter, piney, citrusy remnants of yesteryear's IPA. Ripples of Mandarin orange, lemon peel, spruce and hints of fresh baked country bread call to you above the glass stirring memories of sips of yore. Cloudless and bright upon your waking eyes, inviting and inciting you to take another trip. Don't let these echoes fade into the past.

    IPA

    A process inspired beer. eLBow Room leaves space for some of our favorite hops to boogie down. Each addition throughout this exbeeriment was done strain by strain at its own particular point in time - from first wort entering the kettle to the third dry hop in the fermenter. Where many recipes call for blends at a certain ratio, this was a thought towards artful layering of flavors and aromas. Progressive poundage of singu- lar specific strobiles with room to bloom. Say that three times fast.

    It's OK, we've all been there. Reset here with this English Barleywine inspired sipper. A capital Beer designed for a long, oaky rest. Mahogany hued and rich with special characters of fig, toffee, cherry and red licorice. Rested 16 months in Buffalo Trace Bourbon Barrels.

    Picture this- A sunny beach, light breeze, waves rhythmically crashing on glistening sand. The familiar pop and hiss of a fresh opened beer, a sip brings you to your paradise. Inspired by a style honed in the old country, reimagined south of the border and the perfect sip for your own endless summer. This is a beer without a multi million dollar ad campaign, without bikinis and target markets. Just a simple, crisp and easy drinking beer brewed w pilsner malt, maize and hints of a certain citrus fruit provided by Motueka hops. Save a lime, drink a frisbee.

    When a meteorite from Venus crashes onto Monster Island one can only hope it is not actually an egg. Geedorah is hatched with intent to raze and ravage the planet. This golden dragon comprised of three heads of the most assertive, fire-breathing hops known Mosaic, Nelson, and Amarillo - to make a worthy advesary of even the great Godzilla, king of the monsters. A smooth bodied, well disguised 8.1% monster of a brew. You can help defeat this beast glass by glass until he is sent back to space from whence he came, saving humanity and leaving our own Earthly monsters to business as usual. The End... or is it?

On the hot side, an overdue hop bill adds up to bright notes of berry and limeade from thriftless amounts of Nelson and Motueka hops. All leveraged by honey gold notes from the finest Canadian malts. A delicious, low abv hoppy beer that tastes expensive yet offers a refreshing break from the debt of a life born free.

    Extra Special, to be sure, but not so Bitter by today's standards. This classic English pub style inspired a Yankee or two to brew something very different from the Light Lager dominating the American beer scene in the 80s. A nod to our American interpretation of a malt forward, satisfying beer and the craft ale trailblazers who dared introduce such a foreign and tasty tipple to us across the pond. Nourishing and rich but also dry and rather easy drinking. She goes down smooth and still keeps it regal. All hail the queen!

    A brew for whatever surprises meet you along the path, our spontaneous adventures that make the trip all the more worthwhile. Homer takes us on a hop laden journey of epic proportions. Juicy pineapple, zesty orange and ripe strawberry from a heroic dose of Citra and Mosaic hops sing upon a malted river of shortbread and honey. Celebrating the detours, which can often make up the true treasures of our trip, and the return to familiar space all the more comforting.

    Know your roots! Something about this Southern California life lends itself to an appreciation of the laid back, hypnotic sounds of Reggae music. Nights spent skanking to the riddim under cloudy indoor skies. No fake patois here though, just a rocksteady brew that reeks to babylon with tropical fruit, sweet citrus and puffy clouds of our newly recreational flora.     For your entertainment - a crisp and refreshing Saison brewed with malted rye and conditioned on heaps of organic lemon, orange, and white grapefruit zest.     Jones no more, this baby beast has all the hops we can stuff into a low abv slammer. As we get older and wiser we learn to be mindful of our consumption. Rather than drink less beer (psh!) we move on to more distinguished and nuanced, lower alcohol content, age-appropriate brews. No way we will give up the hops though, our inner child won't have it. Here we push and shove a sexy blend of our favorites on just a nub of malt to satisfy your cravings whilst keeping you composed. Just cause we are this many years old don't mean we gotta grow up.     The meeting of two distinct styles reminds us of the differences that can unite. A spe- cial glow of twilight when day greets night, Momo inhabits a unique space all her own. Light base with a kiss of dark grains, malty sweet meets fruity hops, India Pale Ale meets Irish Red in a sum greater than its parts. Grilled pineapple, ripe strawberry, stonefruit, maraschino and lime from Mosaic and Motueka hops in this lively, spiked fruit punch. Share a momoment with someone special.

    Kolsch Style Bier

    The kindest crumble, the boldest block, the prized wheel, the wonder wedge - any way you slice it, this crisp creation pairs perfectly with the finest fromage. Our beloved Jack set out to make a beer complementary to another of his passionate pursuits. A German, sort of lager-esque, style of ale fer- mented cooler and conditioned longer. Exhibiting satiating notes of rustic bread and delicate hints of orchard fruits that feels right on palate with any piquant party platter.

    Beware the goat of night! - actually he's pretty friendly. Is it a black IPA? We say naa, because how can something be black and pale at the same time? Here we present the dark curiosity of India Black Ale. That's better isn't it? Evil seman- tics can lead us astray. Anyway, drink this ominous concoction under a full moon or under any moon really, just not on a Tuesday, Heaven help you if you drink this on a Tuesday. It is after all deviliciously delicious.

    Dark Lager

    Small, Dark, and handsome. Just like its name sake. A fun style not often seen around these parts but a perfect refreshing cold weather brew. Also called a Schwarzbier in Germany, this unique style blends notes of raisin and milk chocolate with the light and crisp texture of a well cellared lagerbier. We brewed this in tribute to a very special and very spoiled brew dog who fiercly guards the rollup door behind the brewhouse, unless you have a treat for him. A best friend and a forever loyal companion we should all be so blessed to possess. Cheers doggies!

    This abiding brew was built to commemorate our birth by the creek a few years back. To the passing time that we all share. To taking time to celebrate the OUR in hourglass. Many a glass drained and many a friend made along the way and our gratitude deepens. A testament to all we have learned since the beginning sees the wisdom in simplicity. An agreeable 2 row malt base partners with notes of bright berry and punchy tangerine from the harmonious coupling of Mosaic and Nelson Sauvin hops who kindly share this glass with you.     To the most beautiful beer in the whole wide room. This alluring elixir blends sexy drinkability and bodaciously bold notes from our Kiwi bines. Everyone swoons for the tempting tangerine, plump mango, and salacious stonefruit notes these New Zealand beauties bring. A stunner from the Southern hemisphere here to turn tastebuds and rouse nostrils Bangin enough to be a part time model, but responsible enough to keep a normal job.

    Remember those little cans in your transformers lunch box like I do? The one's with the tiny piece of foil you had to peel back to unleash the luscious fruit syrup contained within? Was it juice or dessert? Part of a balanced meal Im sure. Behold a pale ale - nectar like notes of mango and tangerine in this bready and balanced brew. The pale ale has been many a craft beer drinker's sip of enlightenment and we are proud to offer this take on a classic style highlighting some of our favorite contemporary hops.

    You down? A feathery mouthfeel is declared champion as wheat and oats strike a fluffy stunner on a pilsner malt bed. Fierce but refreshing as the cool side of the pillow. Nelson and Citra battle for apical dominance wiht notes of mango and tangelo in this bright and punchy IPA.

    German Pilsener

    Like spiritual pursuit, pilsner takes presence and patience. The cold conditioning of a lagered beer acts just as the rest between thoughts - dropping away all impurities until what is within is cleansed and clarity achieved. When in proper balance, the polarity of malt sweetness and hop bitterness dissolves the illusion of duality in the dance of delicious oneness. A beer of sage subtlety to be contemplated and savored for all of the serenity in its aged wisdom. A divine devotion to the one who makes the grass green.

  • Post Haste

    Easy IPA

    Another process inspired beer wherein all hops added to this sunny slammer were done so after the brew day kettle boil. Post boil, we gently whirlpool the greenery in a hop jacuzzi of sorts, then hops are added to tanks in stages post fermentation to create a beer you'll want another post haste! The later in the beer making process that we add hops, the more unique qualities of these fine flora we preserve. Here, three of our favorites - Citra, Mosaic, and Simcoe - entwine to create an all-day, delightfully drinkable beer of surprising depth and crushability.

    Pretty Alright is actually really good! Modest and slight - this anti-hype beer is everything we love about Belgian styles without the high ABV. A loving ode to a workingman's brew from the old country. Nothing fancy here, just a crisp and refreshing crusher with notes of fresh coun- try bread, lemon meringue, and gardenia blooms wrapped up with a bright, peppery finish. We dont like to toot our own horns, but you are welcome to...

    Relayed here to appreciate the essential support that nourishes life above ground. The assisstant brewer's honorable role is often spent underground until let bloom! Our very own Uncle Bert's first brew sprouts lush notes of peach candy and hints of lemon citrus staked above a crisp and bready grain bill. Citra and Centennial hops are grafted together for a snappy and refreshing pale ale for the hard working summer months. True family rooted in community.

    I, me, me, mine... it's all about you isn't it? I am this, I want that, I PA. Here we have a self reference in reverence of us. After all, beer serves best as a social drink in a public house. Put the ego down and belly up to a glass for all. A genial Golden Promise malty base highlights notes of pineapple, white grape and orange from Azacca and Mandarina hops in this gilded sipper. Let US enjoy this IPA for the times WE share and nevermind the self-centered daily runabout. An IPA for me isn't quite as nice as an IPA for we. Love you!

    Slow and low that is the tempo. Three Brooklyn Boys once said about rocking the mic. Also wise words in the world of lager brewing or the delicate art of cooking a good bowl of rice. Many schools of thought on either end, but the common theme here is celebrating a gentle nuance. Exhibiting a polished shine like sushi grade - this lager brewed with rice exhibits the constraint and subtlety perhaps only noticed by a choosy few - but them finicky folks is our people! Refined, refreshing, and light on the tongue. Not like a fever, not like a cold, the beer is clear, the flavors are bold!

    Here at Docent we are doing our very best to help the homeless hop community. Plucked from their sunny residences in the prime of life, left in the heat to dry out, mashed and compressed to tight, uniformed pellets, these poor cones have had a rough go. You can help us find these stranded, addled hops a home with every honorable pint. Our sincere and constant mission to introduce these lovely little flowers to a comfortable, stainless resting place and find them the accommodation and appreciation they truly deserve. Please join us in our efforts to rescue these noble strobiles from a future uncertain and enjoy the fruits of your philanthropic efforts whiff by whiff.     Yes indeed, here we are... with the unmitigated audacity to brew a substantial, slightly smoked porter and then proceed to add copious amounts of organic maple syrup straight from the short forests of Vermont! A pancake breakfast right here in your glass! With a circular motion hitherto unknown in this region, stir up wafts of scrumptious flapjacks so light and fluffy brown, the finest in the town. This elixir of eskimo legend will keep you cozy while trudging across the tundra searching for a certain holy-man's pancake parish. Dominus Vobiscum!

    Alone, together. A risque expose of a single malt meeting a single hop and the sordid soiree that ensues. The celebration of beauty in simplicity and the creativity born of restraint. This odd couple - the bready and understated biscuit sweetness of Optic Malt from the UK bro-in down with the rowdy and assertive pine and dank whiffs of Michi- gan grown Chinook hops for a night they'll never remember and a bond forged of libatious liasons.

    Musically speaking, the second note of the diatonic scale, or one step above Tonic. In our terms, a more potent elixer than the original. Infused with more flavors of milk chocolate, more roast, more mouthfeel, and most important - more coffee. Whoever said there can be too much of a good thing never had a chance to try this here beer.     Right on the border of pleasure and pain, this is the good hurt. Like eating too much chocolate or cherry pie and still going back for more. Like that old mangy dog that bites us every so often and leaves his furry mark - still we reach out to pet it again and again. It is watching a movie you know makes you cry or the kind of true friendship marked by constantly hurling insults at each other. This big brew puts the Port in Imperial Porter, rich and complex and seductively dangerous. The Good Hurt is here to confuse the senses and dwell in this unexplainable sensation we all seem to crave.

  • The Stallion

    Fresh Hop Brown

    The stallion rides but once a year. Galloping hither from the hop fields' harvest to our kettle in under 36 hours. His cargo of wet Simcoe hops hold precious aromatic oils and flavor compounds not present in the traditionally kiln-dried hops we use all year long. Behold notes of flame-kissed stonefruit, citrus peel, and rustic pine riding atop roasted pecan, caramel, and milk chocolate in a medium bodied, unbridled brown ale. Legend holds it takes 3 drinks to harness the stallion. Drink, Stallion, you are thirsty now.

  • Tiny Umbrellas

    Easy IPA

    An approachable, all-day, beach blanket brew. Inspired by the titular garnish on a tiki drink, a tropical cocktail of hops shine with sunny notes of guava, papaya, and mango. Lounging on just enough bitterness to call it IPA, this fruity brew is crafted to drink in a hammock on the sand.

  • Trabuco

    Brown Ale

    The murky waters of San Juan Creek that (occasionally) flow behind our brewery are fed by the Arroyo Trabuco. Named for one clumsy conquistador's misplaced blunderbuss - a flared barrel musket - which inspires this deep umber ale. Dark brown as the stock of its namesake, this shallow ABV brew surprises with depth of flavor. Comforting notes of toasted pecans, sweet tobacco leaf, cocoa powder and a hint of blueberry waffles. Fittingly the Arroyo Trabuco winds through many of the trails our beloved mountain bikers call home away from, and inevitably lead to, our public's house.

    Shrub

    As in a structure built to support a climbing vine or shrub. A light and crisp malt bill provides the delicate framework upon which the varied aromas and flavors provided by sturdy additions of one or more hops can flourish. Designed to be satisfyingly hoppy yet approachable and deliciously educational. Be it floral, fruity, tropical, citrusy, earthy, herbal, or dank - strobiles for your sudsy studies.     Double IPA

    This is not the greatest IPA in the world, no! This is just a trIBUte. Kindly notice the capitaliz- ing of IBU as we have packed plenty into this unapologetically tenacious brew. In the unre- lenting hunt for inspirado we have born a sudsy celebration of the classics combined into one deliciously dank double IPA. Resinous and sharp, with just a kiss of sweetness to balance the brawny bitterness from ubiquitous North American hops Centennial, Cascade and Columbus. Caution: this beer will knock your socks on their asses.

    German-style Pilsner

    Some may disagree, but what the world needs now is another crushable pilsner. A truly crisp, bitter, bright, and easy drinking beer with just enough umph to keep from boring. Purist and puerile, it's so nice to get back to a beer that abides any situation. Now we did have the unmitigated audacity to use a hop from the Pacific NorthWest(gasp!), but its a lovely, subtle, lemony, noble-resembling beauty by our friends at Indie Hops called Lorien. Enjoy a fresh take on an old world style and bathe in the beautiful banality.

When the taps flow with love there is no validation needed. We love our friends and family that live beyond judgement and simply enjoy life's gold. Some are compelled to critique and some are compelled to create. While others still are more than happy to consume. We see you all as gifts and we hold you in gratitude.

    When the mini pulls the mighty - as we can say in the world of beer, tides have turned. It is an especially wonderful time to be a beer drinker but avast ye before the surly sea swallows ya. One may have to sail way outside the mapped territory to discover the treasure in simplicity and the virtues of restraint. As far off shore as we have buoyed, many astute craft beer drinkers have reconnected with their native tongues. Before there were so many exotic ingredients available to landlubbers, there was a small, seaworthy, and valiant vessel of a beer. American lager in all it's unpreten- tious glory has found safe harbor in the craft beer canon while the titanics sink under the mass of shrewd industry. We are excited to see the community reconnect craft to the essentials and tug some of these bloated boats out of the murk.

    Function over fashion? Perhaps, for once. In the jolly time of ugly sweaters here is a Turtleneck you can be proud to sport. Imbued with kisses of spicy ginger, this throat warming, Winter inspired, Belgian-style strong blonde goes down smooth like fine linen. The perfect swig under the mistletoe with your darling or for when the midnight bells ring in our next 365 or 6 days. No itchy side effects, no sly snickering, just pure cozy comfort in a glass.     German IPA

    Straight from the Fatherland that gave me my Father, an all German ingredient IPA built to celebrate the man who I call Pop! If you ask him, he'll tell you we have the best beer! Show- casing a newer school of German cultivars with Huell Melon and Mandarina Bavaria - these hops for pops include reliably cordial notes of orange peel, honeydew melon, and Gardenia upon a sturdy and traditional German grain build. Raise a glass and prost to the man largely responsible for my beer making instincts but please, dont hold it against him.

    Strong Scottish Ale

    Having an Uncle Bert is good. Reliable and strong, Uncle Bert is a man of few words. He lets his rich notes of vanilla, caramel, and creme brulee do the talking. Good old sturdy Bert with a smooth port like character upon which his tart cherry and plum fruitiness are perched. Complex indeed, yet somehow still very approachable. First to arrive and last to leave but never wearing out his welcome. Having an Uncle Bert is fun and fun is good. Have you an Uncle Bert? You should.

    They say you can pick your friends, you can pick your nose, but you can't pick your family. Luckily we have nurtured a thriving community close to home in San Juan Capistrano that provide us with kindness, laughter, and even organic fruit you can pick yourself! Right down the street from us something special is germinating. An organically grown, educa- tional, and bountiful food forest. All that noble farm work takes plenty of thirst quenching beer, which we are honored to provide our friends at the Ecology Center. A true symbiotic relationship built on nurturing nature.

    One is the lonliest number - a wise man once sang. Everybody needs a companion after all. Imagine Simon sans Garfunkel, Hall with no Oates, the Captain without Tennile! Here we play matchmaker with hops we think would make a lovely couple. Power duos, if you will, harmonizing on a delicately malted couplet. You and I explores the interactions between 2 different varietals and their augmenting effect on eachother. Love will keep us together.
