Docent Brewing’s Carlsbad Village taproom on State Street brings craft beer and fermentation-inspired food to North County San Diego. Our kitchen turns out the Korean Reuben — pastrami, house kimchi, chile aioli on grilled sourdough — that’s earned a loyal following across all our locations, alongside the Fried Chicken Sandwich with fresno chile slaw, hot honey, and house dill pickle on a challah bun. Beer braised beef tacos, pork belly grain bowls loaded with kimchi and deviled eggs, and a wagyu Smash Burger with beer-caramelized onions round out a menu built to pair with whatever’s cold on tap in the Village.
