Docent’s newest home sits on State Street in the heart of Carlsbad Village, and the kitchen wasted no time making a name for itself. The Korean Reuben has already built a following here — pastrami, swiss, house kimchi, chile aioli on grilled sourdough. The Fried Chicken Sandwich, with fresno chile slaw, hot honey, and house dill pickle on a challah bun, has become a Village staple. Same craft beer. Same commitment to house-made everything.
